Unlike a standard closed-fold dosa, open butter dosa is served completely open-faced (looking more like a thick uttapam), showcasing all its heavy toppings on top. There is a generous layer of podi masala on top of the dosa and then topping which includes a large scoop of yellowish-golden potato-onion palya (aloo masala) and a dollop of white butter. Dosa is served with a veg gravy which is like coconut based veg kurma and 2 types of thick chutneys – coconut and tomato-onion. The dosa is thick, soft and buttery and tastes heavenly. This dosa is very unique and unlike any which others which are served across so many south indian restaurants across Pune.
