Kolkata styled vegetable chop, also known as beet chop is a popular Bengali street food made with a variety of vegetables (specially winter vegetables like carrot and beetroot and boiled potatoes) and spices, crumb-coated and then deep fried untill golden brown. Beetroot lends it the characteristic vibrant maroon color and a hint of sweetness. Small amount of peanuts are sometimes added to provide the extra crunch. The regular gram masala is replaced by the bengali bhaja masala to provide the typical bengali flavour. Vegetable chop is usually served along with tomato ketchup, mint chutney or mustard sauce (kasundi) and onion salad.
