Indori poha has a distinct sweet, sour and spicy taste. Thick poha (Jada Poha) is washed in water and then tempered with spices and mixed thoroughly. One of the important ingrediants in the spices which gives a very distinctive taste is is fennel seeds (saunf). After tempering and mixing, poha is kept in a container/kadhai over a pan of boiling water – this keeps it warm/steamed for a long duration of time. Sometimes small amount of milk is sprinkled which keeps the poha moist and soft for longer duration. At the time of serving, poha is garnished with onion (optional), coriander, ratlami sev, charkhi boondi, pomegranate (optional), roasted peanuts (optional), boiled/cooked peas (optional), Jeeravan masala and bit of lime juice.
